Frequently Asked Questions

CITREM contains a minimum of 13 percent citric acid content. This citric acid component is what gives CITREM its distinct functionality compared to plain mono- and diglycerides, contributing to its performance as an emulsifier and stabilizer in meat and fat-based applications.

CITREM has an acid value ranging from 10 to 25 mgKOH/g and a saponification value between 220 and 250 mgKOH/g. These values reflect the degree of esterification and the fatty acid composition of the product, which influence its emulsifying behaviour in different formulations.

CITREM is manufactured within strict heavy metal limits, with arsenic, lead, mercury, and cadmium each kept below 1 to 3 mg/kg, and total heavy metals capped at a maximum of 10 mg/kg, ensuring it meets food-grade purity requirements.
