DATEM is a food emulsifier made from diacetyl tartaric acid esters of mono and diglycerides derived from fully hardened palm oil. In bakery formulations, DATEM helps enhance gluten development, supports better volume, and delivers consistent product quality across batches. DATEM supports uniform dispersion of oleoresins and extracts in food formulations, helping improve stability, appearance, and batch-to-batch consistency during processing.
